Grilled Radicchio Salad


Grilled Radicchio

  • 2 heads radicchio quartered (keep stem end holding them together)
  • 1/3 cup olive oil
  • 1 tsp. salt
  • ½ tsp. pepper


  • 1/2 cup olive oil
  • ¼ cup sherry vinegar
  • 1 shallot chopped finely
  • ½ tsp. Dijon mustard
  • ½ cup grated pecorino cheese
  • 1 tsp. salt
  • ½ tsp. pepper


Grilled Radicchio

  • Prepare grill for high heat.
  • In a small bowl whisk olive oil, salt and pepper.
  • Coat radicchio with olive oil mixture.
  • Grill radicchio cut side down for 3-4 minutes or until leaves are charred and tender.

Salad Dressing

  • Place mustard, vinegar, shallots, salt and pepper in a bowl.
  • Whisk in olive oil.
  • Place radicchio on a plater and spoon dressing over quarters.
  • Sprinkle grated cheese over grilled radicchio and toss.
