Sautéed Broccoli with Bacon


(Serves 4)

1 medium onion, chopped
2 slices bacon, finely chopped
1 tbsp unsalted butter
1 tbsp extra virgin olive oil
1 ½ cups water
2 cups of broccoli, chopped
1 tbsp Parmesan cheese
Salt & pepper, to taste


Sauté onions over medium heat for 1 minute with butter & olive oil. Add bacon & let cook for several minutes until onions & bacon soften & bacon begins to render.

Add in broccoli, stir, then add water & cover again. Let cook for about 10 minutes, stirring occasionally. If more liquid is needed, add a little more accordingly.

Season with salt, pepper & Parmesan cheese. Serve immediately.
