Turkey Bolognese with Libby’s Peas and Carrots

INGREDIENTS:

  • 1½ tsp. olive oil
  • 1 tbs. butter
  • 3-5 oz. ground turkey
  • ¼ cup onion, chopped
  • ¼ cup celery, chopped
  • ¼ cup whole milk
  • ½ cup store bought marinara (or homemade)
  • 1 ½ cup little ears pasta
  • Libby’s peas and carrots (single serving), drained
  • 1 tsp. fresh parsley, chopped
  • 1 tbs. fresh basil, chopped
  • Parmesan, to taste
  • Pinch of salt
  • Pinch of freshly ground black pepper

METHOD:

  • In a sauté pan heat the oil and the butter.
  • Add the onions and celery and cook for 3 minutes.
  • Add the ground turkey to the onions and cook for 10 minutes.
  • Add the parsley, salt and pepper, stir and cook for 30 seconds.
  • Add the milk and cook for 2 minutes.
  • Add the marinara to the turkey mixture and continue cooking for 10 minutes.
  • Add Libby’s single serving peas and carrots and basil.
  • Continue cooking for 2 more minutes.
  • Meanwhile, fill a medium pot with water and set over high heat. Bring water to a boil and add pasta.
  • Cook pasta until al dente, about 8 minutes.
  • Drain pasta and pour into a bowl.
  • Top pasta with turkey Bolognese and sprinkle with Parmesan, if desired.
