Turkey Bolognese with Libby’s Peas and Carrots
1½ tsp. olive oil
1 tbs. butter
3-5 oz. ground turkey
¼ cup onion, chopped
¼ cup celery, chopped
¼ cup whole milk
½ cup store bought marinara (or homemade)
1 ½ cup little ears pasta
Libby’s peas and carrots (single serving), drained
1 tsp. fresh parsley, chopped
1 tbs. fresh basil, chopped
Parmesan, to taste
Pinch of salt
Pinch of freshly ground black pepper
In a sauté pan heat the oil and the butter.
Add the onions and celery and cook for 3 minutes.
Add the ground turkey to the onions and cook for 10 minutes.
Add the parsley, salt and pepper, stir and cook for 30 seconds.
Add the milk and cook for 2 minutes.
Add the marinara to the turkey mixture and continue cooking for 10 minutes.
Add Libby’s single serving peas and carrots and basil.
Continue cooking for 2 more minutes.
Meanwhile, fill a medium pot with water and set over high heat. Bring water to a boil and add pasta.
Cook pasta until al dente, about 8 minutes.
Drain pasta and pour into a bowl.
Top pasta with turkey Bolognese and sprinkle with Parmesan, if desired.
