Tuna Tartare

INGREDIENTS:

  • 2 lb. fresh tuna steak, cut into ¼ inch cubes
  • 1 cup olive oil
  • ½ cup lime juice
  • ¼ cup lime zest
  • 1 tsp. wasabi paste
  • 1 ½ tbs. soy sauce
  • 1 tsp. mirin
  • 1 tbs. hot sauce
  • ¾ cup scallions, minced
  • 2 avocados, diced
  • ½ cup crème fraiche
  • 1½ tbs. salt
  • 1 tbs. pepper

METHOD:

  • In a large bowl add the olive oil, lime juice, zest, wasabi paste, soy sauce, mirin and hot sauce. Then add the tuna, salt and pepper.
  • Chill the tuna for at least 1 hour. Then add the scallions and avocado. Toss and adjust seasoning.
  • Serve in cups with crème fraiche.
