Spinach Artichoke Dip

Ingredients:

  • 20 oz. frozen spinach (defrosted & strained)
  • 1 can artichokes
  • 2 shallots chopped
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • ½ cup milk
  • 8 oz. cream cheese
  • ¼ cup crème fraiche
  • ½ tsp. nutmeg
  • 1 tsp. salt
  • ½ tsp. pepper
  • ¼ cup parmesan cheese
  • ½ cup mozzarella shredded, plus ¼ cup mozzarella shredded

Directions:

  • In a saucepan over medium heat, place oil & butter.
  • Add shallots and sauté for 2 minutes.
  • Add spinach and cook for 3 minutes or until dry.
  • Pour mixture into a bowl.
  • Add the milk to the sauté pan add cream cheese & ½ cup mozzarella.
  • Cook until smooth, add crème fraiche and spinach.
  • Cook for 1 minute to incorporate flavors.
  • Remove from heat.
  • Add nutmeg, salt, pepper & grated cheese to mixture.
  • Pour into ramekins & top with remaining ¼ cup mozzarella and 2 tbsp. parmesan cheese.
  • Bake for 20 minutes at 375°
