Spinach Artichoke Dip

Spinach Artichoke Dip


20 oz. frozen spinach (defrosted & strained)
1 can artichokes
2 shallots chopped
2 tbsp. butter
2 tbsp. olive oil
½ cup milk
8 oz. cream cheese
¼ cup crème fraiche
½ tsp. nutmeg
1 tsp. salt

½ tsp. pepper
¼ cup parmesan cheese
½ cup mozzarella shredded, plus ¼ cup mozzarella shredded


In a saucepan over medium heat, place oil & butter.
Add shallots and sauté for 2 minutes.
Add spinach and cook for 3 minutes or until dry.
Pour mixture into a bowl.
Add the milk to the sauté pan add cream cheese & ½ cup mozzarella.
Cook until smooth, add crème fraiche and spinach.
Cook for 1 minute to incorporate flavors.
Remove from heat.
Add nutmeg, salt, pepper & grated cheese to mixture.
Pour into ramekins & top with remaining ¼ cup mozzarella and 2 tbsp. parmesan cheese.
Bake for 20 minutes at 375°
