Cauliflower Gratin

Cauliflower Gratin


1 medium cauliflower cut into florets
4 tbsp. unsalted butter
4 tbsp. flour (all purpose)
2 cups milk
¼ tsp. nutmeg, salt/pepper
2 cups arugula
1/3 cup gruyere cheese, grated


Parboil cauliflower & drain.

Melt butter in saucepan, add flour, and whisk for 2 minutes.

Add milk and stir until thickened. Add nutmeg, salt, and pepper to taste.

Stir in arugula and ¼ cup of gruyere cheese. Cook for 30 seconds, then add cauliflower and stir.

Place mixture in a baking dish. Sprinkle the rest of the cheese on top of cauliflower and bake at 375° for 20 minutes or until golden brown and bubbling.
