Banana Walnut Bread



  • 3 1/3 cup all purpose flour
  • 1 tbsp baking soda
  • 3/4 tsp cinnamon
  • 1 tsp salt
  • 2 1/4 cup sugar
  • 4 eggs
  • 1 cup oil
  • 7 bananas, mashed
  • 1/4 cup sour cream
  • 2 tsp vanilla extract
  • 1 cup walnuts, chopped and toasted (optional)


  • Preheat oven to 350 F.
  • In a standing mixer fit with a whip attachment, whip the eggs and sugar together on medium speed. When it reaches ribbon stage (pale yellow) slowly drizzle in oil.
  • Sift together the flour, baking soda, cinnamon and salt. In a separate bowl, mix together mashed banana, sour cream and vanilla extract.
  • With a rubber spatula fold in one third of the flour mixture, followed by one third of the banana mixture. Continue to alternate the wet/dry ingredients until all incorporated. Stir in walnuts.
  • Divide mixture evenly between two greased and floured loaf pans. Place on the center rack of the oven and bake 45-55 minutes or until a toothpick inserted in the center comes out clean.
  • Cool and serve.
