Gluten Free Cinnamon Muffins

INGREDIENTS:

MUFFIN

  • 1 cup brown rice flour
  • 3/4 cup potato starch
  • 1/2 cup tapioca
  • 1/2 cup brown sugar
  • 11/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 cup raisins
  • 1/3 cup vegetable oil
  • 1 tsp. vanilla
  • 2 eggs
  • 1 cup soy milk

STREUSEL TOPPING (or fresh berries)

  • 1/4 cup nuts chopped
  • 1/4 cup light brown sugar
  • 2 tbs. brown flour
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tbs. butter

METHOD:

MUFFIN

  • Preheat oven to 400 degrees.
  • Mix the dry ingredients in a bowl then add the raisins.
  • In another bowl, whisk together the oil, vanilla, eggs and milk.
  • Slowly whisk the wet ingredients into the dry until well blended.
  • Pour into prepared muffin tins.
  • Sprinkle the muffins evenly with streusel or with fresh berries.
  • Bake for 20 minutes.

STREUSEL

  • Mix all the ingredients in a bowl until pea size.
