Dried Fruit Stuffed Pork Loin

INGREDIENTS:

Pork

  • 1 3-4 lb. pork loin with a pocket.(ask butcher to do this for you)
  • ½ cup dried apricots
  • 1/3 cup golden raisins
  • 1/3 cup prunes
  • ½ cup apple cider
  • 1 cup chicken broth
  • 3 sage leaves
  • 1 tsp. fresh grated ginger
  • 1 garlic clove
  • fresh herbs, sage, rosemary, thyme
  • 1 onion
  • 1 cup dried apricots, prunes and raisins

METHOD:

Pork

  • Place the dried fruit, cider, chicken broth, garlic, sage and ginger in a medium saucepan.
  • Cook for 25-30 minutes over medium heat.
  • Let cool and puree in a blender.
  • Place stuffing in a pastry bag with a metal tip.
  • Stuff the pork making sure stuffing goes all the way through.
  • Season the pork with salt, pepper and olive oil.
  • Place pork in a roasting pan, surround with the herbs, onion and cup of dried fruit.
  • Roast pork in a 375 degree oven for 35-40 minutes.
