Dried Fruit Stuffed Pork Loin
1 3-4 lb. pork loin with a pocket.(ask butcher to do this for you)
½ cup dried apricots
1/3 cup golden raisins
1/3 cup prunes
½ cup apple cider
1 cup chicken broth
3 sage leaves
1 tsp. fresh grated ginger
1 garlic clove
fresh herbs, sage, rosemary, thyme
1 cup dried apricots, prunes and raisins
Place the dried fruit, cider, chicken broth, garlic, sage and ginger in a medium saucepan.
Cook for 25-30 minutes over medium heat.
Let cool and puree in a blender.
Place stuffing in a pastry bag with a metal tip.
Stuff the pork making sure stuffing goes all the way through.
Season the pork with salt, pepper and olive oil.
Place pork in a roasting pan, surround with the herbs, onion and cup of dried fruit.
Roast pork in a 375 degree oven for 35-40 minutes.
