Chicken Sausage with Spinach and Basil Pesto
1 package of Donatella mozzarella basil chicken sausage
King’s Hawaiian Hot Dog Buns
5 cups fresh spinach
1 cup basil
3 garlic cloves crushed
1 tbsp. lemon juice
1/3 cup parmesan cheese
½ tsp. salt
½ tsp. freshly ground black pepper
½ cup extra-virgin olive oil
Heat grill to medium heat.
Grill sausages until browned (internal temperature reaches 160 degrees)
Place spinach, basil, garlic, and lemon juice in a blender.
Process for 30 seconds, then add cheese, salt, and pepper.
Process for another 30 seconds.
Lower speed to slow and with the motor running add the extra virgin olive oil in a steady stream, process mixture until smooth.
Place sausages in hot dog buns.
Top sausage with the pesto sauce.
