Chicken Sausage with Spinach and Basil Pesto

INGREDIENTS:

  • 1 package of Donatella mozzarella basil chicken sausage
  • King’s Hawaiian Hot Dog Buns

Pesto Sauce

  • 5 cups fresh spinach
  • 1 cup basil
  • 3 garlic cloves crushed
  • 1 tbsp. lemon juice
  • 1/3 cup parmesan cheese
  • ½ tsp. salt
  • ½ tsp. freshly ground black pepper
  • ½ cup extra-virgin olive oil

METHOD:

  • Heat grill to medium heat.
  • Grill sausages until browned (internal temperature reaches 160 degrees)

Pesto Sauce

  • Place spinach, basil, garlic, and lemon juice in a blender.
  • Process for 30 seconds, then add cheese, salt, and pepper.
  • Process for another 30 seconds.
  • Lower speed to slow and with the motor running add the extra virgin olive oil in a steady stream, process mixture until smooth.
  • Place sausages in hot dog buns.
  • Top sausage with the pesto sauce.
