Cauliflower Gratin

Ingredients

  • 1 medium cauliflower cut into florets
  • 4 tbsp. unsalted butter
  • 4 tbsp. flour (all purpose)
  • 2 cups milk
  • ¼ tsp. nutmeg, salt/pepper
  • 2 cups arugula
  • 1/3 cup gruyere cheese, grated

Directions

  • Parboil cauliflower & drain.
  • Melt butter in saucepan, add flour, and whisk for 2 minutes.
  • Add milk and stir until thickened. Add nutmeg, salt, and pepper to taste.
  • Stir in arugula and ¼ cup of gruyere cheese. Cook for 30 seconds, then add cauliflower and stir.
  • Place mixture in a baking dish. Sprinkle the rest of the cheese on top of cauliflower and bake at 375° for 20 minutes or until golden brown and bubbling.
