Sautéed Broccoli with Bacon

INGREDIENTS

(Serves 4)

  • 1 medium onion, chopped
  • 2 slices bacon, finely chopped
  • 1 tbsp unsalted butter
  • 1 tbsp extra virgin olive oil
  • 1 ½ cups water
  • 2 cups of broccoli, chopped
  • 1 tbsp Parmesan cheese
  • Salt & pepper, to taste

DIRECTIONS

  • Sauté onions over medium heat for 1 minute with butter & olive oil. Add bacon & let cook for several minutes until onions & bacon soften & bacon begins to render.
  • Add in broccoli, stir, then add water & cover again. Let cook for about 10 minutes, stirring occasionally. If more liquid is needed, add a little more accordingly.
  • Season with salt, pepper & Parmesan cheese. Serve immediately.
