Aunt Eve’s Rugelach

INGREDIENTS

Ingredients for dough

  • 8 oz cream cheese, room temperature
  • ½ cup butter, unsalted & room temperature
  • ¼ tsp salt
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour

Ingredients for filling

  • ½ cup granulated sugar, plus more for finishing
  • 2 tsp cinnamon
  • ¾ cup golden raisins
  • 1 cup walnuts, finely chopped
  • ½ cup apricot preserves
  • 1 egg white, beaten with 1 tbsp water

DIRECTIONS

  • Preheat oven to 350°F.
  • For dough, beat butter & cream cheese in a bowl until light and fluffy. Add sugar, salt, & vanilla. Add the flour & beat until combined then place dough on a floured surface & roll into a ball. Dive dough into four pieces and refrigerate for 2 hours or ideally overnight.
  • Mix the first 4 filling ingredients in a bowl & set aside.
  • Take one piece of dough from the refridgerator and roll out into a circle. Spread 2 tbsp of preserve and then 1 tbsp of filling on the dough. Cut the dough into 8 pieces (like a pizza into 8 slices).
  • Roll the dough into crescent shapes & brush with egg wash. Sprinkle with sugar.
  • Bake for 15 to 20 minutes. Repeat with the remaining ingredients.
